Vegan Eggnog

This Vegan Eggnog is easy to make & alcohol-free.

  • 3 cups plant milk I'm using Trader Joe's Almond Breeze
  • 1 14oz can full-fat organic coconut milk I use Whole Foods brand (365)
  • 4-6 tbsp Lakanto monkfruit sweetener or use organic dates or pure organic maple syrup
  • .5-.75 tsp organic Saigon cinnamon you judge how much you want
  • 1/8-1/4 tsp organic ground nutmeg
  • 1 tsp organic vanilla extract

Garnishes (optional)

  • Coconut milk whipped cream
  • ground cinnamon
  • ground nutmeg
  • star anise
  • cinnamon stick


  • Add everything to a blender (except any garnishes you want to use). Blend well for 1-2 minutes.
  • Serve chilled or you can heat it up on low-medium heat to your desired temp.
  • Serve in a pretty cup & garnish


Why Monkfruit?

I like to keep the glycemic index down as much as possible. Monkfruit is a great plant-based alternative to sweeten your recipes. I love the taste of Lakanto monkfruit sweetener. They even have a powdered sugar too! So cool!

My Ninja & Nutribullet

So, I have had plenty of blenders in my time. I've never had the privilege of owning a Vitamix, but I love my Ninja blender. I have a Ninja blender that is a lot like a food processor too...and then I have a Nutribullet to make really creamy salad dressings, smoothies, and vegan sour cream.
I got my first Ninja blender in like 2008-2009. It lasted for over 5 years. I've had 2 Ninja blenders since then. The first of the 2 lasted 3 years. I have only had this 2nd one for less than 6 months.
The Nutribullet is my favorite because now I can make creamy vegan salad dressings and Buddha bowl dressings. YUM!

Too Bad

I'm sad that I don't have a Cousin Eddie to share the holiday with...but below are some holiday items that are sure to crack a grin whereever you take them.
